The menu with aged meat is still booming among thousands of meat dishes. We would like to introduce the story about the aging of our Black Roasted Chicken today.
During the aging process, the meat’s natural enzymes break down proteins into peptides and amino acids, which leads to more tender and delicious meat. During the preparation of chickens at CHAMP CHICKEN, we use our special marinade with black-rice malt fermented from brown rice, which has higher enzyme activity, in order to maximize the amount of amino acids in the roasted chickens. To be aged with time and effort is the secret of the beautiful taste of our Black Roasted Chicken.
Please come and try it just out of the oven at our store in Kin town. For people who would like to have it at home, the refrigerated shipping is available to the inside (chilled) and outside (frozen) of Okinawa. Your order is always more than welcome.
食肉の「熟成」とは食肉を寝かせることでお肉に含まれる酵素の働きによりタンパク質が分解され、
ペプチドやアミノ酸といったうま味成分が増えると共に肉質をが柔らかくすることが
熟成肉のおいしくなるメカニズムです。
CHAMP CHICKENの「熟成鶏 ブラックローストチキン」は
酵素力が強い玄米から作る黒麹を熱成させた黒麹塩をもとに、更に独自調合をさせ発酵させることでアミノ酸を最大化させたローストチキン専用の特製黒麹塩を使用しています。
手間暇をかけて熟成させる事が美味しさの秘訣のブラックローストチキンです。
金武町まで足を運んで頂ければ出来立てでお召し上がり頂くことが可能です。
